hey everyone hope you’re having an amazing day it’s Mark Wiens I’m in Port of Spain which is the capital city of the beautiful islands of Trinidad and Tobago in the Caribbean today we are going on an ultimate street food tour we’re going to start at the market we are going to eat some incredible food we’re gonna meet some amazing new friends the food here is so good we’re gonna have an overdose of spice and seasoning and flavor that’s a wet mess of chickpeas and chutneys and pepper sauce all of the cultures coming together representing the delicious food wow that’s tasty I’m so extremely excited to be in Trinidad and Tobago and I’m going to share all of the delicious food coming up with you right now in this video [Music] huge thank you to the amazing people of Trinidad and Tobago your support has been overwhelmingly positive and I mean I can’t tell you over the years how many of you have sent me amazing messages emails social media inviting me to Trinidad and Tobago coming to experience the food absolutely amazing to finally be here and thank you for your amazing support thank you to visit Trinidad for arranging my entire trip here so happy to be here let’s get started eating [Music] it’s bright and early 6 a.m in the morning in Port of Spain we are beginning this tour today at the Central Market which is where everybody comes together from Port of Spain to buy their ingredients for cooking we’re going to have some breakfast some food here we’re going to meet up with some friends and we are in for an incredible day of food today good morning Zach good morning good morning and then we’re also hanging out today with badawi yeah you have a good memory very nice to meet you and you’re from and then we’re also with oh hello hello and then we’re also hanging out with David every day yeah and David what do you do I’m from Market Movers Market movies yeah so we are like online business online grocery market so we deal with fresh produce and goodbye and we deliver so we are in very good hands at the market today is that what do you mean yeah awesome it’s like a massive distribution Market just everything fresh you can imagine all the peppers and okras and bananas and varieties of fruits and vegetables this is where you can get it all well we would call Green seasoning is like oh yeah that kind of thing we’ll take it to make Chinese green seasoning which makes chicken food tastes unique a shadow Benny is almost omnipresent in every single dish that you eat and just the herbs the the seasonings that go into the food is truly what makes the food of Trinidad and Tobago so special and so flavorful Jeanette try one thank you yeah let’s crack it open like crack it open yeah really flesh oh yeah oh nice yeah yeah and nothing to receive this okay all right so good sweet jelly juicy oh they have local chutneys and things yeah and you can taste the different chutneys yep that she makes oh some extra pep oh yes you make all of these chutneys you can buy the bags of chutneys and then you can sample them with some of the chickpeas heavy Peppa heavy Peppa is the only way to go your your Chana and all the chutneys are delicious delicious we got the special pepper treatment Peppa ancha oh it’s great have a great day thank you oh man and people here are so incredibly friendly like so many cool people happiness delicious food ingredients I’m loving it here in Trinidad and Tobago we’re gonna bundle of this for the for the callaloo definitely need this after we walk around the market and after we eat the fish broth and some of the dishes at the food court within the market we’re actually going to be going back to badawi’s house and he’s going to cook for us a special dish where the main ingredient is Dashing Bush which are Carol leaves we’re gonna buy all the ingredients fresh from the market and then be able to cook and see the entire process and eat it so this is the main ingredient for the color for the color and these are these are calories but in in Trinidad you call them let’s call it yes the young young ones right okay this is the peak of this season so there’s a lot of avocados massive slices of pumpkin also we need some pumpkin for the callaloo also yeah for sure how many kilos are these those massive pumpkins you can actually smell the sweetness of it as you walk past and we need some pumpkin for the callaloo as well Congo pepper is it hotter than the moruga one of the things I mean I love about Trinidad and Tobago are there amazing Peppers Hot Chili Peppers all right we’re going in cheers oh oh yeah but okay it’s okay good it’s not always not so much about the heat but about the flavor of the peppers here in Trinidad that just makes it I think we can pop it all out and maybe change that was tomorrow the China oh yeah when you pop those shoes in you get the heat of it yes yeah is that the Scorpion this is the more dangerous the more dangerous yeah caution [Music] so there’s another integral component with callaloo coconut milk coconut milk yeah okay okay so this is the root of The Dashing plant a gromco vision and then the leaves that brought the top is okay yeah blue dashing blue dashing blue dash in here this is the one that goes in Trinidad you need both the the tarot leaves and the Taro Roots yeah it’s so cool to be able to get all the ingredients fresh and then be able to make it today that’s going to make all the difference in the way it tastes so we’re now at the indoor section where they have a lot of the seafood the fresh meat the amazing Seafood that goes into the cuisine it’s fresh [Music] like a mask the fresh beef before we make the callaloo we are going to the back food court hey what’s up man well yeah man what’s up man we are gonna go to the food court and we are going to meet with a lady who’s going to make us a fish broth for breakfast oh it smells good in here Caroline Caroline Miss Caroline what are you making first cow heal soup oh awesome and this is we put yeah for the fish bro for the fish broth okay great oh this is gonna go inside of the oh wow so these are peas which are kind of kind of split peas okay that’s kind of pureed so that’s going to make the super really hearty when you added a little pumpkin in there too yeah for the fish broth it’s going to be more clean and just focused on the flavor of the fish to give it that body and so this is the fish for the fish broth oh it’s you got it seasoned already yeah [Music] oh so just that seasoning the juice oh it smells so good and that’s all that’s some of the the green seasoning plus some of the fish fish water juices that have come out into the soup oh lime juice goes in the fish what did you just order this movie but it’s for you though okay so it’s called Moby Moby yeah movie so it’s on the back of a tree you might be back and then they have the spices in it they have um and a seed bay leaf cinnamon yes oh man oh I like it very medicinal kind of like Health tasting so that fish broth is ready as soon as the fish is cooked [Music] so this is the cow Hill that’s been simmered and boiled down separately all right that goes into the bowl first nice [Music] all right thank you that’s the cow heal thank you this is a Saturday morning tradition it’s so hot so fresh so good I’m gonna try that fish broth first oh wow yeah that’s just soothing oh pepper sauce yes that broth is so soothing though the flavor of the fish and then the sourness of the lime juice right yep yeah it’s a lot of fun time in this fine kindness cool excellent I’m going to move over to the cow heal oh and then this has a different like ingredients as well because she added some of the split peas in there so that gives it some body yeah some thickness [Music] oh this one is delicious too but definitely heavier heavier yeah yeah all the whoa of the entire heel that will wobble right out of your spoon jiggly oh it’s so tender wiggle around in your mouth and always just takes it to the next level so you guys normally eat this soup every every Saturday when you come to the market yep yeah awesome yeah it’s a great great tradition it’s a new spot right in the spot it was a big thing on a Saturday morning it definitely cannot go wrong it’s ready yes oh again greeting about it everything coming from right here yeah yeah fresh fresh and simple yeah and we’re now heading back here with all the ingredients to go to bedawi’s house to cook the callaloo [Music] from the market with all the ingredients and we have the the luxury of great lighting today because this is their Studio where they film the videos um very cool and we’re gonna get started making the callaloo yeah really a staple on like a Sunday okay yeah we do like sopatha Sunday lunches you know kalaluya macaroni pie stew chicken that kind of thing you know but you know today we’re doing on Saturday yeah foreign must be fresh [Applause] [Music] yeah and the lime is fully underway uh splicing up all the ingredients really really quite fine from the okra to the pumpkin to the onions and the pimentos everything gets like a really really fine dice so to coriander okay you can’t have a meal without Shadow Benny in Trinidad the leaves yeah yeah cut it yeah very nice so many leaves wrapped up into a roll to be able to slice it then spoken nice [Music] and all the ingredients are ready and prepped the onions go in first then the okra that’s already smelling delicious garlic hot pepper pumpkin and those green seasonings the green onions the parsley and Thyme getting ready leaves okay Steam for a bit all right then we’ll add the coconut milk okay a little bit [Music] excuse me yeah out oh now the coconut milk yeah lovely too much liquefying all those vegetables the pumpkin the orangeness the sweetness of the pumpkin The Dashing Bush tarot leaves are starting to break down the fibers and liquefy smelling so good foreign is going to be boiled to eat along with the callaloo something with grandma always told me is ready when the okra seeds started in pink ah yeah and you know that it’s finished you almost there yeah okay some swizzling oh cool it’s like a hand blender gnashing into a sauce but it’s gentle at the same time it’s kind of fun it’s a workout yeah if you’re Switzerland brought it together but this definitely is a great consistency looking really nice and as I say you could add more liquid to this and make it more like runny and then have it like a soup more protein oh you’re eating it but we having it as a side [Music] the greatest avocados on earth is zavaca oh beautiful yes thank you badawi for this just amazing callaloo everything is natural there’s no like packaged seasoning no this is all natural all the green seasoning fresh coconut milk um hmm yeah yes you were telling me also it’s called the top and bottom right because we’ve got the top leaves of the tarot plus the bottom root or tuber you’ve got those green seasonings the garlic in there wow so good these are pepper sauce that would be good too oh okay okay yeah the Scorpion a little goes a long way a little scorpion okay [Laughter] and then with some of that avocado the tarot is really good too it’s like nice and firm the Scorpion what a dish perfect I’m glad I’ve given you a full colorful experience thank you so much yes what it is well thank you both for taking taking us around the market and then for showing us how to make callaloo it’s been fantastic so much fun actually so much fun to hang out you guys are awesome yeah thank you that was so much fun yeah yes really appreciate it David man that was so much fun yes yes you guys are awesome keep it up we’re moving on we have a lot more to eat on this ultimate food tour [Music] so this is Saint James the the quotes and city that never sleeps after work action everybody’s lying and I’m having a good time having something to eat so we have Roti we have doubles we have a variety of food that you can get inside but now we’re gonna try the dusty Roti Mai Khan nice [Music] Justin rice two [Music] guys [Music] [Music] foreign [Music] I love that fluffing up move you could just see how it just kind of like aerates the whole Roti and then she loads it up she fills it up with your choice of meat so first it’s potato and what is this pumpkin okay so potato and pumpkin [Music] she adds on potatoes you get your choice of meat beef or chicken that goes on top and then she sprinkles on some chili sauce and then wraps that up into a huge ball of Roti stuffed so good it’s so fresh [Music] [Music] yes okay you’ll take napkins right thank you very much thank you very much I love how she rolls it out fresh and that method of shaking it kind of like flopping it around that just brings out the texture and then she fully loads it I got the beef and Zach and I are gonna split this because we have a lot more food to eat oh yeah oh wow I love how soft and supple it is I could just feel that puree of potatoes in there just like Oh So Soft so warm okay what would be the would you normally remove all the paper before eating it okay just peel it back okay I’m gonna break it in half though could you could you cradle could you cradle this okay oh oh it’s so so like gushy you got to see the Interiors of it I hope we don’t lose too many juices oh look at that the potato the pumpkin the beef smells incredible you’re losing something okay we’re moving a little we’re losing a little juice but that’s okay we’ll scoop it up cheers [Music] oh wow oh it’s so good oh man the potato is so light and fluffy and runny then you got the sweetness of that pumpkin and the spice coming out of that beef so warm and fresh not recommended to to split it in half but we are going to be eating a lot absolute happiness [Music] [Applause] [Music] foreign [Music] oh yeah never gets boring never gets old so good [Music] cheers you can see how young it is and how just jelly-ish how soft it’s gonna be that’s delicious [Music] so across the Savannah where we had the coconut we are now pretty much across the park and in the evening time there’s a Whole Food Market that sets up people come here to Lime to chill to hang out to eat food and so this is where we’re going to continue with this food tour today and we’re on our way to eat a lot eat our way through this amazing Street Food Night Market we are going to eat doubles now doubles is probably one of the most famous one of the most beloved Foods in all of Trinidad you get double of the breads Chana the chickpea Curry on top and then you get your choice of toppings and all the different chutneys that go on top right that feels so good in your hand yes do you hold it it’s amazingly soupy the chickpeas on there so you just kind of grab the first correct yeah first one okay and do you stir it at all or do you you can stir it up if you like stir it at all okay it kind of mixes on its own if it makes it kind of Falls hot the second bar kind of Acts to to catch her to catch the catch the fall okay all right cheers I love that Chutney the shadow Benny right with the culantro that gives you that herbaceous flavor to it you’ve got the freshness of the cucumber in there that crunch favorite street food snacks in Trinidad this is breakfast this is lunch this is I can definitely get used to eating this yeah we have a lot to eat don’t worry [Music] that’s why it’s called Doubles [Music] soup they specialize in all sorts of different soups they’re famous for their corn soup you kind of choose your additions there’s some sweet potatoes there’s some looks like some cassava looks like some uh Taro they add that to the cup before they add your soup so is this one the corn soup [Music] [Music] and next she’s moving over to the South Station and there’s two different versions the chicken feet and the cow heel and that looks like an amazing sauce pickling brining mixture we’re gonna try the the South’s first gelatinous bit right there the wiggle South tears oh it’s so gelatinous so soft and creamy yeah but you really taste the herb the culantro the shadow bunny in there just absorbed into it it’s really nice okay I’m gonna move into the chicken feet and it’s kind of the same same pickling mixture I believe just with feet instead of hook oh chicken feet are amazing again it’s served cold it’s refreshing it has this amazing kind of Snappy gelatinous texture again we’re gonna move on to the soups now we’ve got two different versions the beef soup which is thick and Rich and Hearty you can see the oil floating on the surface you just see how thick how meaty that is and then we also got the vegetarian version with corn with dumplings flour dumplings with some carrots in there [Music] foreign oh nice yeah that’s warm and soothing you taste the flavor the sweetness coming from that corn we’re gonna add in a little more pepper sauce oh if you add some to this piece of corn yeah oh with that pepper sauce oh yeah that thoroughly enhances it [Music] checking up waffles so conveniently located right next door we’re gonna try our next food yeah oh like the spice yeah like two minutes yes oh now I get it okay now I guess so the the roast the cumin and then they um they grind it okay and they cook it in the pot with some oil and then they throw in the chicken on the pork human so it’s like fried chicken yeah cumin cup soup cumin stewed um chicken and pork okay cheers guys cheers thank you [Music] oh wow yeah you could immediately taste that burst of cumin what do you guys think it’s great it’s delicious I love it how is it over there man proper yeah okay [Music] okay thank you very much fresh soursop juice [Music] oh that’s just like pure soursop pulpy fluidy sweet and sourness next up we’re going to eat something called a pylori and it’s this fried batter ball we’re gonna go see the process of how she makes it right now [Applause] that’s an amazingly wet batter almost soupy but she it’s such a technique how she makes it she grabs it with her fist grabs a handful of it and then she like squeezes it between her Palms squeezing it out of her thumb into this little teardrop shaped little fried fried ball now it’s full it’s bubbling it’s popping she’s stirring in them up oh that’s gonna be great [Applause] press it open and then you just go in yeah [Music] so we’re digging into the pylori’s and these are again little fried batter balls I’ll go with the the method Zach’s method where you take one of them and then break it in half so you have a nice perfect little scooper okay I’m gonna scoop in for that mango first oh yes get a chunk of the mango on there a little touch of that Peppa [Music] that’s just like a vessel for those chutneys and those sausage the Sweet Mango the Peppa the flavor it’s so good just a little bit spicy but it has a really nice fruity taste to it oh it’s so good that combination yeah they’re kind of like the texture of donuts just Savory Donuts but really like really spongy amazingly spongy texture it is a perfect vessel for scooping up chutneys and sauces because it just absorbs into it that one but I mean I love the variety all the different chutneys next up we’re trying something called roast fish at Kiki’s roast fish what type of fish is that Kingfish okay so it has that sauce and garlic and then some more Shadow Benny and onions and pepper and green onions folds that into a packet then it goes on to the hot plate until it Cooks until it like balloons up all of those juices are going to flow out of the fish that smells so incredibly good when she opens that balloon of foil just this cloud of herbal garlicky steam just erupts out of it it smells so good so meaty and chunky and just overloaded with seasoning seasoning some of the pickles on there [Music] oh wow such a lean and muscular fish like good flavor non-greasy non-oily just very clean all of that flavor and then with that that pepper with that escovitch pickled peppers and onions goes up your nose a little bit oh it’s so good and the vinegariness as well going for the shrimp guys Italian shrimp simmered in oil garlic that’s tasty too I love that sear that garlic and I love how she serves it with a lot of vegetables there’s broccoli she made this amazing vegetable stir-fry over the fire and then again served with onions and those chilies Valley mushrooms so much flavor such a fruitiness and that pickly brininess of it is so good this is really like gourmet food cooked by Chef Kiki I think it gets later more and more people come it’s a great environment people kind of just park the cars in this entire yard grab food hang out in their car bring their own table bring some lawn chairs lime we are moving on now for more food [Music] we are in a very Lively evening especially nightlife Street there’s a lot of bars there’s a lot of restaurants along this street and there’s the legendary Yusuf Gyros and they were telling me that the owner here is originally Syrian they have Syrian Roots there’s a Syrian Community within Trinidad and part of Spain it’s so incredibly Multicultural and I mean that’s what that’s the reason why tasting your way through Trinidad is one of the best ways to experience the culture foreign [Music] so he’s making a fresh batch of peppers and onions and tomatoes wow we got a splash on the whoa oh this is the the meat is going on wow so he’s just stirring frying that up just like violently stirs it up adds on some oils and some sauces um really with that trowel he really like mashes them up [Music] [Music] he’s a magician very skills barbecue sauce [Music] okay what sauce you want in it garlic ketchup everything right heavy pepper yes yes heavy pepper wow that’s huge thank you very much this is what you come to eat in the middle of the night the the meat juices the sauces the cheeses we got a whole mountain of the gyro meat literally everything you can think of from that front cabinet fried and put into a and wrapped fried and wrapped okay cheers guys hmm foreign yeah they garlic cream sauce thank you oh man it’s amazing so saucy so meaty so just like you feel the melted cheese and the mushrooms in there oh that’s extra Peppa and with that garlic wow you can just feel it shopping up in your stomach thank you thank you okay so you sprinkle it with Peppa sprinkle it with garlic sauce oh man going for this shrimp when you have a when you have a string of meat this long there’s only one thing you can do going vertically oh wow well I am that texture is that like greasy friedish cereal and garlic sauce and then you have to load it up with that pepper the fruitiness of that pepper sauce you can tell why it is a staple of street food fast food in Port of Spain [Music] okay thank you very much oh that was incredibly good incredibly filling and Incredibly meaty [Music] so next up we are a little bit outside on the outskirts of the city in what looks like more of a industrial area there’s a gate with a small sign you walk to the back of the yard and it is a doubles Factory where they are making the baras fresh [Music] thank you very much oh yes okay yeah it is [Music] the Bara is the base of any doubles it is the fry bread the batter is actually quite wet um and then they have them all ready to go in little balls he just kind of like flattens them out really like really quick process though just kind of like flattens it out with the fingers into the hot oil a blazing hot oil literally a fries for two seconds uh kind of like immediately balloons up you flip it over just for one second and then it goes on to a like a strainer Spike man the fresh bottas yes man that’s gonna be so good so there’s a potato mixture [Music] [Music] oh they’re ready already too just three seconds yes oh you also like dress it oh okay try one right yeah right yeah sure oh yeah heavy Pepper please type of sauce as well gonna kill them you’re going to have this thank you thank you wow so what is this called again a bite a baigan pie yeah so it’s like a doubles except it’s like a doubles with like different sheets inside and this is a beautiful boat shape to be able to trough to be able to hold in all the ingredients oh wow oh it’s so good oh the eggplant the addition of the creamy eggplant and then you’ve got the starchy chickpeas all of that spice and flavor and the chutney the mango the pepper oh the Smoky roasted eggplant is what takes it to the next level that is extraordinary flavor it’s so soupy and so like moist and just I love the shape of this to be able to hold in all those ingredients and just be able to it’s a boat [Music] thank you [Music] this is the roast pepper okay great yes roast pepper sauce and this is the fresh pepper sauce yes [Music] the mango yeah Shadow Benny on a switch the sweet sauce [Music] thank you trying the Aloo pie so this is the same as last except with potato instead of the eggplant this time she hooked me up with some extra chili some fried chili plus some of the pepper sauce on the on the top there oh little cucumber a little mango juicy and messy and sloppy and wet it is yeah yeah oh wow so good again but again with a different texture the Smoky eggplant this one is the potato the creamy potato [Music] that’s insanely tasty oh I think the freshness is what makes a difference and those chutneys and sauces are just on the next level thank you behind the gate walking to the back home of some of the greatest precious doubles you’ll eat foreign tour we are going to experience something that’s very dear to the hearts that’s a huge part of the culture of trinidadians and tobagoons and it is a steel pan it’s called a pan yard line [Music] foreign [Music] came out [Music] oh incredible Harmony and Melodies and Tenors so many sounds all and I went inside I don’t think I could say anything because it was so loud on the inside just ringing from all directions one of the most incredible musical experiences I’ve ever had but another reason people come to hang out with a handyard is to Lime to hang out to chill and tonight we’re having a bunch of food on the lineup and so we’re getting ready to eat soon and more music okay we’ve got some corn soup to start with oh and dumplings [Music] almost like really thick and hearty Acro is saltfish [Music] foreign [Music] [Music] oh yeah oh doubles just something you can eat every single day multiple times a day when you’re gonna turn it on every day morning at night I don’t know it’s been real good yeah not yet it’s all the wine I know nobody ate earlier beer it’s up to you yeah [Music] okay the last dish that I’m having tonight is the pillow it’s like a pilau but Trinidadian style rice cooked with chicken and spices and Seasonings [Music] oh and beans in there coconut milk oh that’s tasty and comforting and just loving the entire atmosphere and culture of the pan yard cool oh I just finished another song but such an incredible atmosphere and you’ve been the pan yard the liming the food the music such a culture and an incredible part of Trinidad that completes an amazing day of street food in and around Port of Spain in Trinidad and Tobago people are so incredibly friendly the mix of cultures that have combined together to create the unique Trinidadian food is just unbelievable the flavors the peppers the spices huge thank you to visit
